All our truffles are handmade ganache centers and then the creamy ganache is hand dipped into true tempered chocolate. Our milk chocolate Irish Cream truffles are hand-made using Callebaut Belgian Milk Chocolate, heavy cream, and high-end Irish Cream liqueur. The finished truffle is wrapped in gold foil, because these are worth their weight in gold! Our Dark Chocolate Mint truffles are hand-made using Callebaut Bittersweet Belgian Chocolate, heavy cream, and high end peppermint liqueur. The finished truffle is wrap in green foil. Green for the color your friends will be when they find out you have these! Our Dark Chocolate Champagne truffles are hand-made using Callebaut Bittersweet Belgian Chocolate, heavy cream, and champagne cognac. The finished truffle is then garnished with edible gold dust for a beauty presentation! The chocolate for the shell is properly tempered, and is never made from low-quality coating chocolate. Coating chocolate is generally infused with paraffin or hydrogenated oil, giving the chocolate a waxy texture. My truffle shells are always made with 55% cocoa pure chocolate.
