About Us

We have been making chocolate truffles since 1997. For many years they have delighted friends and family. Over the years it became clear that our champagne truffle was the most popular, and has provided the name for our shop.

We develop our products based on flavors and combinations that we enjoy, and also that are suggested by friends and family. We work with raw ingredients, and limit the use processed foods whenever possible.  Cream, sugar, vanilla, and eggs are our mainstays.

We have tried different chocolate brands, but selected Callebaut several years ago as our preferred choice. It is rich and flavorful, has excellent texture, and is reasonable to work with. You may occasionally see a bit of 'bloom' on the chocolates, but this does not affect the flavor or texture. It does tell you that we use real chocolate that is tempered in small batches. We never use waxy coating chocolate.
